Pleurotus eryngii: This is one of the main cultivars during autumn and winter. However, it has faced competition from Bailing mushroom in recent years, leading to a decline in its market share. Despite this, the price for fresh Pleurotus eryngii remains stable at 8–10 yuan per kilogram. It is suitable for production across both northern and southern regions, but growers should manage production volume carefully to avoid oversupply.
Agrocybe aegerita: The sales market for this mushroom is still on the rise, with expanding production areas. Autumn and winter production is expected to increase by 23% year-on-year. Before the holiday season, the price of fresh Agrocybe aegerita will stay between 36–42 yuan, while post-holiday prices may drop by 4–5 yuan.
Coprinus comatus: Known for its wide adaptability, this mushroom is now being cultivated in both northern and southern regions. However, the market has become oversupplied, and processing is time-consuming and labor-intensive. It’s advisable to adjust production according to market demand. Fresh Coprinus comatus sells for 4–5 yuan per kilogram, while dried products range from 28–35 yuan.
Stropharia capsicum: This mushroom is known for its excellent flavor and is popular in the salting and processing markets. Although its production areas are not yet widespread, it can be appropriately cultivated in southern provinces. Fresh Stropharia capsicum is priced between 4–5 yuan per kilogram.
Pearl Oyster Mushroom: Also known as the "plentiful mushroom," it is one of the main varieties grown in the north. With its smooth yellow color, the market is gradually expanding, and prices remain stable. Fresh pearl oyster mushrooms are sold at 5–6 yuan per kilogram, and salted products are priced between 16–18 yuan.
Jinding Mushroom: This variety is not widely produced, and the market often faces shortages. Fresh Jinding mushrooms are priced between 5–6 yuan per kilogram, and it is primarily sold domestically or processed into salted products. Dried Jinding mushrooms are less popular in the market.
Yellow Umbrella: Known for its good taste, the consumption base for this mushroom is growing steadily each year. Fresh Yellow Umbrella mushrooms are priced between 6–8 yuan per kilogram. They can be processed into salted products year-round, making them ideal for urban markets. Production areas have no restrictions, and raw materials are easily accessible, making it a viable option for development.
Himeki Mushroom: In the past two years, new varieties of Himeki mushrooms have been exported, particularly to Japan, where they are very popular. The purchase price for fresh Himeki mushrooms increased from 10–12 yuan last year to 12–15 yuan before the holiday season.
Grifola frondosa: Also known as millet mushrooms, this variety is prized for its great taste and is mainly exported in dried form. The price remains relatively stable, ranging from 30–35 yuan per kilogram, with occasional fluctuations up to 33–38 yuan.
